Toasted Butter Pecan Cake

A southern delight unlike any other! Made with rich, toasted Hudson pecans, this cake is a hit at church potlucks, holiday dinners, and birthday parties.

  • 2 cups chopped pecans
  • 1 ¼ cup butter softened
  • 3 cups flour
  • 2 tsps baking powder
  • ½ tsp salt
  • 2 cups sugar
  • 4 unbeaten eggs
  • 1 cup milk
  • 2 tsps vanilla

Instructions

  1. Grease and flour 3 nine inch layer cake pans and preheat oven to 350 degrees F.
  2. Toast chopped Hudson pecans in ¼ cup butter in 350 degree oven 20 to 25 minutes stirring frequently.
  3. Sift flour, baking powder, and salt.
  4. Cream 1 cup softened butter. Gradually add sugar to butter, creaming well. Blend in eggs one at a time, beating well after each addition.
  5. Gradually add dry ingredients to the wet ingredients, alternating with milk, blending well after each addition and beginning and ending with dry ingredients.
  6. Stir in vanilla and 1 1/3 cups pecans.
  7. Turn batter into 3 nine inch layer pans and bake for 25-30 minutes.
  8. Cool for 1 hour on wire rack, then carefully transfer cake to serving platter. Frost with our butter pecan frosting.
