Autumn Salad with Toasted Pecans
This salad combines many favorite flavors of Fall. As outside temperatures cool, meals tend to lean towards heavier, comfort-foods; and this bright, fresh salad adds balance to the table.

Ingredients
- 1 cup Arugula or Baby Spinach 1/2 Avocado, diced
- Handful of Craisins
- Handful of crumbled Goat Cheese
- ½ Pear or crisp apple, chopped
- ¼ cup pecan halves, lightly toasted
- 1 soft boiled egg
Dressing
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tsp Honey
- 1 tsp Dijon Mustard
- Salt and pepper to taste
Instructions
- Whisk together dressing ingredients in a small bowl and set aside.
- Toss salad ingredients and top with dressing.
