Ingredients

  • 1 cup Arugula or Baby Spinach
  • 1/2 Avocado, diced
  • Handful of Craisins
  • Handful of crumbled Goat Cheese
  • 1/2 Pear or crisp apple, chopped
  • 1/4 cup toasted pecans
  • 1 soft boiled egg

Directions

Balsamic Vinaigrette: Equal amounts of olive oil and balsamic vinegar, a squeeze of honey, and a squeeze of grainy Dijon, salt and pepper.
